Superfood Peanut Butter Bites

  • ½ of an avocado
  • ¾ cup natural crunchy peanut butter
  • 1 small banana
  • ¼ cup peanut flour
  • 2 tbsp coconut flour
  • 2 tbsp chocolate brown rice protein powder
  • ½ bar of Baker’s Unsweetened baking chocolate
  • 1 tbsp coconut oil
Instructions
Blend together avocado and banana in a food processor until smooth. Place mixture in a bowl and stir in peanut butter until well combined. Add in peanut flour, coconut flour, and protein powder. Mix until the batter resembles cookie dough texture. Roll batter into 12-13 balls. Place on a parchment paper lined cookie sheet, stick a toothpick in each one, and freeze for 5-10 minutes to harden them slightly.
Melt chocolate and coconut oil in a small pot over medium heat. Once fully melted, remove pot from heat. Dip each ball in the chocolate until fully covered. Place back on the parchment paper. Repeat with remaining balls. Freeze the balls for 20 minutes. Store in the refrigerator or the freezer.
