ALMOND JOY OVERNIGHT OATS

  • 1 c. oats
  • 1 c. almond milk
  • 1 c. light coconut milk (get the kind in the can for a stronger coconut flavor)
  • 2 Tablespoons chia seeds
  • 1 Tablespoon cocoa powder
  • *Optional: 1 Tablespoon maple syrup for added sweetness
  • 1 banana, mashed
  • Coconut flakes or chips
  • Chopped almonds
  • Cocoa nibs or dark chocolate chips
  • Banana slices
INSTRUCTIONS
  1. Combine first five ingredients (plus maple syrup if using) in a bowl and mix until combined.
  2. Pour into two mason jars or containers with tight fitting lids.
  3. Let sit overnight, or at least for a few hours.
  4. When ready to eat, top with banana slices, coconut flakes, chopped almonds and cocoa nibs/chocolate chips.
  5. Grab and spoon and enjoy
