- 2 cups rolled oats
- 1 cup pecan pieces
- 1 cup medjool dates
- 2 tablespoons chia seeds
- 2-3 tablespoons coconut oil, melted
INSTRUCTIONS
- Soak dates in warm water for 5-10 minutes to soften.
- Drain and discard water from dates.
- Add dates and 2 tablespoons coconut oil to bowl of food processor and blend until a paste. Add additional tablespoon of oil if needed to achieve a paste.
- Add oats, pecans, and chia seeds and pulse just to combine.
- Line an 8x8 pan with parchment or waxed paper.
- Place mixture in pan and place a sheet of parchment or waxed paper on top. Press down firmly and evenly. I roll a can over top while applying pressure. This helps the bars hold together.
- Refrigerate for 20-30 minutes so the bars can harden up a bit and then lift them out of the pan.
- Cut into 8 equal bars or smaller if desired.
