PEANUT BUTTER MOCHA ENERGY BITES

1 cup old fashioned oats
1/4 cup flax meal
1 t. espresso powder
2 T. unsweetened cocoa powder
2 T. unsweetened shredded coconut
Pinch of salt
1/2 t. vanilla extract
5 T. creamy peanut butter
1/4 cup pure maple syrup
Instructions

In a large bowl combine all of the ingredients.
Whisk or stir with a spatula until everything comes together.
Cover and place the mixture in the fridge for 30 minutes to chill.
Once chilled scoop out tablespoon sized portions and roll into a ball.
Store the energy bites in an airtight container in the refrigerator for up to a week.
